Katie's Kitchen: Beef Stroganoff

   Beef Stroganoff   Growing up, Be ef Stroganoff was always a go to, family favorite meal. Although this is my Aunt Rochelle's recipe, my mom loved making it. She loved it because it is easy to make and, if you add peas like my mom and Aunt did, it is a one pot meal. In my family, we always used ground beef, although I later learned that others make it with stew meat. Since I grew up with ground beef, it is my favorite way to make it. Another thing with using ground beef is that you substitute ground chicken or turkey if you want to try to make it healthier. (Just be sure to add more seasoning to help the chicken/turkey.) Another thing to note is about the peas. Yes you can leave them out, but why, they are yummy in the dish. The only thing is that the peas either need to be fresh or frozen.  Chicken Cordon Bleu     Chicken Cordon Bleu is one of my favorite dishes and is so easy. It is one of my go to meals. It is also easy to scale to make as many servings you need, so it is great for singles or couples. It is one of those meals that sound fancy and hard, but is actually to easy. Now, that said, there are a couple of tricks you need to know. The first thing is to go to the meat counter to get your chicken breasts. They will gladly sell you as many or as few chicken breasts that you want. Plus they will be fresh. Next, head over to the deli and have them cut you a slice of ham and Swiss cheese for as many Cordon Bleus that you plan to make. Good ham makes a huge difference. As for the Swiss cheese, this is the only place to get the cheese. Do NOT get processed cheese as it will all melt away before the dish to cooked and all you will be eating is chicken and ham.       Stained Glass Candy (aka Old Fashion Hard Candy)     I grew up enjoying this candy every Christmas. My grandma would always make it in multiple flavors. Eating a piece of this candy brings back such fond memories. For those that don't know what this candy is, it is the same as a Jolly Rancher, only the candy is poured out flat to look like a sheet of glass. Then you break it into pieces and these pieces will look like the glass used by artists that do stained glass. It is very pretty and tasty.  This is a pretty easy recipe to make, but there are some things that you will have to have to make it.
